  2. Bringing the best salad to a potluck
  3. Providing the only healthy item at a potluck (Are potlucks generally unhealthy or is that just a Southern thing?)

Breakfast Crumbles - Second in The Grateful Plate Series!

Accidentally Amazing - Quick Veggie Quesadillas

Sometimes life gets hairy and you forget to do certain things that are important to sustain life. Like eat. Maybe you've probably been having hunger pains and grumbles for a while now, maybe they even started around 3:00 pm, but waves of anxiety or worry might have extinguished them. These quesadillas were born out of that exact scenario and were a total accident. An amazing accident that happened after only 30 minutes of effort!! They’re healthy, fresh, full of protein, fulfilling, and bursting with flavor. They will use up that pepper in your veggie drawer and the last few cherry tomatoes.

Quinoa Black Bean Veggie Burger

veggieburger1

Burger Up’s Marathon Burger inspired this recipe, it was the first veggie burger I ever fell in love with. Not to brag, but my husband says he likes these better, so……. I eat one of these guys the day before most of my races if I can (and by most of my races I mean the one I typically run in April).

If you’re looking for something healthy, easy, and quite versatile, this would be a great recipe for you!  Make these delightful little burgers and post a picture of them on Instagram! Tag #itsallofit so I can see your creations!! Follow my account at @corrielanderson so you can see another way to enjoy these burgers here.
